Oolong in Chinese literally means (Black Dragon Tea). Oolong teas acquire their distinct flavor characteristics from a process of mild fermentation. After rolling the leaves, the tea is permitted to ferment only tuntil the edges of the leaves begin to brown. The tea is then fired which halts the fermenting process and captures the remarkable charm associated with Oolong tea.
